Grill it whole, roast it in the oven, or portion it into filet mignon steaks. Cook to medium-rare for the best flavor and texture. For a restaurant-quality meal, wrap the tenderloin in bacon before roasting.
Fossil Farms sources our Elk from family-owned farms in New Zealand and Canada. The Elk graze naturally on grass, plants, leaves, and bark. Our New Zealand Elk are 100% grass fed and grass finished. Farmers in our “Never Ever Program” never use antibiotics, steroids, or hormones.
Elk contains more protein and less cholesterol than beef, pork, and even chicken. It also provides a great source of iron, phosphorus, and zinc. Elk offers a rich flavor similar to a cross between Venison and Beef with a deep red color.
